Pumpkin Chia Pudding
1 cup unsweetened almond milk
¼ cup chia seeds
1 ½ tbsp maple syrup
½ tsp pure vanilla extract
Pinch of sea salt
½ tsp ground cinnamon
¼ tsp ground ginger
Pinch of nutmeg
¼ cup unsweetened pumpkin puree
Poor all ingredients (except pumpkin puree) into a bowl and stir well to combine. Allow chia seeds to settle for 20 minutes, whisking every 5 minutes. Place in fridge for at least 2 hours or overnight. Mix in pumpkin puree after the chia seed mixture has thickened, just before serving.
Enjoy for dessert or also makes a great breakfast in place of cereal.
